Food For Thought

Each and every month, this page will have a new recipe and helpful hint for your pleasure. We hope everyone enjoys these recipes from our staff and friends of Willowbrook.


This week's recipe is:

Hot Chicken Salad Casserole

4 to 5 Cooked Chicken Breast Halves Cut Up
3 Stalks Celery, Chopped
  
1 Large Onion, Chopped 
1 Cup Instant Rice 
1 t Lemon Juice
1 Cup Potato Chip Crumbs

1(10 3/4 Oz.) Can Cream of Celery Soup
1 Cup Chicken Broth 
1 t. Salt 
1/2 t Pepper
 1 Cup Mayonnaise

2 Cup Cheddar Cheese

Combine all ingredients except potato chips and cheese. Place in a greased casserole dish and top with chips and cheese. Bake in a pre-heated oven at 350 for 40 to 45 minutes.

This month's helpful hint is:

Once you've placed ingredients in the slow cooker and turned it on, it is neither necessary nor advisable to lift the lid to stir the mixture. The steam generated in the cooking creates a vacuum that seals the lid. Every time you open the lid, both steam and heat dissipate, which can prolong the cooking time.
